Basics101:Stable Fresh Cream for filling

Here’s the best hack ever! No idea where it came from but it’s epic. Watch my video here

Make sure your bowl and your cream are cold. Stick your bowl in the freezer for 30 mins if need be, but as long as it’s metal or glass, it will stay at a nice cool temperature.

Add icing sugar and a drop of vanilla essence (optional) then whip until thickened (halfway)

Then the secret ingredient!! Mascarpone cheese, add 1-2 tablespoons and then whip until piping thick.

Add to a piping bag and decorate as desired.

Refrigerate once your cake/dessert etc is decorated, it’s stable but that doesn’t mean it’s heat resistant 🤣
