There is something about this salad that is the perfect of sweet and nutty. The rocket can be swopped for watercress which gives a similar nutty flavour. I really love it.
In a bowl add:
Bed of mixed lettuce, rocket or watercress
Sliced cucumbers
Sliced and cubes pears (I used a green pear, I have no clue of the variety, it looked nice and felt ripe yes that’s how we choose stuff)
Sliced red onion
Toasted seeds (pumpkin and sunflower, pine nuts)
Chopped dates
Chopped walnuts/pecans (optional)
I would have LOVED to have added some shavings of Parmesan if I had but hey, it’s a salad and it’s there and it’s not like anyone knew it needed much more.
Drizzled with olive oil, sprinkled with pepper and salt. Served it with feta and garlic salad dressing (I think it’s Ina Paarmans)
