You can make this ahead of time, keep it marinating in the fridge or even freeze it. You can grill it on a cast iron pan or even better, pop it onto the braai and enjoy. Just make sure to save some marinade to make into a sauce, that’s the best part.
Friggin’ lekker Chicken Skewers by @fehmz
500g chicken fillet, large cubes
Robot peppers, cut into cubes
Onion, cut in cubes
250ml fresh cream
Marinade:
125-180ml buttermilk
30ml water
5 garlic cloves
Small handful parsley
Small handful coriander
1 whole dried red chilli
1 whole fresh red chilli
1 tsp garlic & herb spice
1 tsp lemon pepper
2 tsp Cajun spice (optional)
2 tsp smoked paprika
Salt, to taste
Pinch cumin powder
2 lemons., zest & juice
Blend the above marinade, remove 1/3 of mixture and set aside for the sauce.
Add the rest of the marinade to your chicken and veg. Marinate for 6-8 hours or overnight
Soak skewers in water to prevent sticks from burning when grilling
Thread chicken on to skewers alternating with peppers and onion.
Marinated skewers can be frozen or prepped 1 day before.
Grill for 2-3 minutes of each side until done, basting with leftover marinade from mixing bowl.
Add the marinade that you set aside into a saucepan and gently heat, add the fresh cream and simmer until a creamy thick sauce develops.
Spoon your creamy sauce over the grilled chicken skewers and serve with lemon wedges on a bed of rice or fries or with a side salad, whatever you like.
