Fish Tikka Naan Wraps
I made these fish tikka naan wraps for the final round of the Sea Harvest Hunger Games challenge! It was super exciting to be chosen to go into the final round of the competition and what a comedy of errors to cook in an outside kitchen. Let’s just say the blooper reel was something else. hahahaha you can find it on my Instagram and Youtube pages.
Fish Tikka Naan Wraps recipe:
Use one box of Sea Harvest Hake fillets.
Remove from package and cut into large cubes
Tikka Marinade: (inspired by Asima Moosa)
1 tsp crushed garlic
1 tsp salt
1/2 tsp turmeric
1-2 tsp chilli powder (adjust accordingly to your heat preference)
1/2 tsp black pepper
1 tsp egg yellow colouring
2 tblsp plain yoghurt
1 tsp rough red chilli (chilli flakes)
Juice of 2 lemons (or 6 tsp lemon juice)
2 tsp tomato paste
Add fish and leave to marinate for an hour.
Thread your skewers and place into a preheated oven on 170degC for 10-20mins
Make a lemon butter sauce in a saucepan with:
125g butter
1/4 cup lemon juice
Heat
Baste on fish skewers while in the oven.
Easiest Naan ever: (inspired by @jamieoliver)
2 cups self raising flour
1.5 – 2 cups plain yoghurt
2 tsp baking powder
Pinch of salt
Mix together, add more yoghurt 1 tblsp at a time if needed. You want a soft dough.
Use flour to roll out 5-6 naan breads
Place onto a hot cast iron pan, let it cook on a dry pan for one to two turns, then as it gets done add a tsp of ghee rubbed over. Optional: add sesame seeds after the ghee.
Cucumber raita:
Grate half cucumber (discard the middle watery bit)
1 cup plain yoghurt
Salt to taste
1/2 tsp crushed jeera
Chopped coriander
Mix together.
Serve fish cubes on a bed of hot naan with sliced red onions, cucumber raita, the leftover lemon butter sauce, coriander and some lemon wedges.
