Sole Fish

I love Sole fish, it’s fuss-free, the bones are easy to find because they’re all attached to the spine and the skeleton looks so cool when you’re done like in the cartoons (minus the head ?)

I generally don’t season seafood much unless I am doing a peri peri version or a curry.
So I just fry it for 3-4 minutes on each side in some garlic butter with salt and pepper (no lemon at this stage)
Just before serving, I pour over my lemon butter sauce and serve with lemon wedges. It felt like having OB.
Lemon butter sauce:
Gently heat:
2-3 tbsp garlic butter (check my blog for the recipe I use by @tasnimessop)
Half cup of fresh lemon juice
Whisk in 1 tbsp Mayo (optional)
Just before serving add 150ml-200ml fresh cream and let it heat. Do not boil as it will curdle.
