Simple Couscous Salad
The thing I love about couscous is that you can literally add anything you like to it and it can be an amazing salad or an amazing main dish.
Couscous Salad recipe:
Make 1 to 1.5 cups of couscous according to pack instructions.
Half cup chopped cucumber
Half cup chopped baby tomatoes
1 red onion finely sliced
2 tablespoons fried onions
Half cup chopped rainbow peppers
Half cup peanuts and raisins
A handful of chopped curly leaf parsley
Olive oil (start with quarter cup)
Taste and keep adding as you like.
