Pumpkin 3-ways (featured on Heerlik Halaal)

1. Pumpkin soup
Boil 1kg pumpkin pieces (2kg or more if you are doing it 3-ways) in a pot with water and a pinch of salt.
Cook until soft/done.
Remove what you will use for the other two dishes
Now Add:
1 tsp crushed garlic
2 tsp Aromat (or veg spice)
2 tsp crushed black pepper
1 green chilli
½ whole jeera
1/2 cup jungle oats
250ml fresh cream
1 tin coconut cream/milk
Pinch of cinnamon
½ onion sliced/chopped
5-8 curry leaves
Coriander to garnish
Pinch of mustard seeds
Add jungle oats to the boiling pumpkin to cook completely. In a pan add some ghee/oil, then add chopped onions, the curry leaves, mustard seeds, garlic and whole jeera. Saute until onions are translucent, add a pinch of salt, the pepper, chilli and all other spices. Mix well and add to the pot of pumpkin and oats. Use an immersion blender to blend to a smooth consistency. Add the fresh cream and coconut milk/cream.
Taste for seasoning. Serve garnished with cream and coriander/parsley.
My hack – boil 2kg pumpkin pieces and reserve the extra 1kg for the sweet and 1kg for savoury pumpkin versions below:
2. Pumpkin – Savoury
Oil – a splash of oil or a knob of butter
1 tsp mustard seeds
Sprinkle of whole cumin
5-10 curry leaves
One clove smashed garlic
Dried whole red chilli
Handful of fried onions
Heat through and add 500g of cooked cubed pumpkin (boiled when you did your pumpkin soup)
3. Pumpkin – Sweet
Add two pieces of butter
Handful of coconut
1/3-1/2 cup sugar
Add 500g cooked pumpkin and smash up. Serve topped with chopped pecan nuts. Can also drizzle sweetened nestle cream.
