Pollo Limone aka lemon chicken
The recipe I tried from the Chinese & Thai recipe book
One of the dishes I really REALLY love at @Colcacchioparktown is the Pollo Limone and when I first tested this lemon chicken recipe it reminded me of that! I needed to tweak it quite bit but lo and behold…this is now UH MAY ZING!!
Wallahi I have made this 4 times since then and you are gonna LOVE it!

Pollo Limone aka lemon chicken
Recipe by @fehmz adapted from 400 Chinese & Thai recipes cookbook
Chicken:
1 kg tenderised fillets (butterflied and pounded to even thickness)
1 tsp Salt
Half tsp crushed Black Pepper
1 tsp crushed fresh garlic
Leave to marinate for 1 hour.
Whisk:
1 egg white
1 tbsp maizena/cornflour
Add to chicken just before cooking and mix well.
Lemon sauce:
Half cup fresh lemon juice (approx 3 big lemons)
Juice of 2 limes, optional
1tblsp maizena/cornflour
10ml yellow food colouring
1 cup of water
250ml fresh cream
3-4tblsp butter (about 62g)
Garnish
1 lemon slices
Coriander/parsley
Whisk the first 5 ingredients together. Melt butter in a saucepan and add your lemon mixture. Cook on medium heat, stirring continuously until thick.
Add 250ml fresh cream and bring up to heat again. Set aside.
In a large non-stick pan, heat 2tblsp oil and start with your lemon slices, you want them to start getting charred and also flavour the oil.
Add your chicken fillets and cook for 3-4 minutes on each side until lightly browned and not dry.
Remove lemon slices.
Add half of your lemon sauce to simmer with the chicken. Serve immediately.
Top your chicken with sauce and garnish with lemon slices etc.
Delicious with soft buttery mash, sweet potato wedges, salad, chips, even rice! ?
