I love anything phyllo and lately, I’m loving beetroot on everything so when I saw this on the Taste.com website I had to try it! I used @florasouthafrica Plant BUTTER™ to brush between the sheets of phyllo and it was super easy to do. Because it’s healthy does it mean this phyllo pizza is healthy too? hahaha
So this was literally super easy to do, it’s not vegan but it is vegetarian, perfect for Meat Free Mondays
Brush 9-10 sheets of phyllo with melted Flora PlantBUTTER™
Spread a basil or chilli basil pesto on your top layer and fold in all the sides by about 1cm to create an “edge” or crust
Sprinkle lots of grated mozzarella over.
Pop it into a preheated oven at 180degC for 15-20 minutes until golden brown.
Remove from oven and top with chunks of beetroot and pieces of danish feta.
Pop back into the oven for 5 minutes
Remove, sprinkle generously with more pesto and top with fresh rocket or basil and it’s ready to serve!
p.s. you can also add pine nuts for some extra crunch if you like
