One Dish Oven Roast Chicken & Taters
I have acceded to your requests (and ignored the 3% who said no ?) this has got to be the easiest chicken salt & pepper (kinda) recipe ever. I literally threw it together while chatting to a couple friends who popped around. 15 minutes prep, forget about it on a 1 hour bake and serve.
Easy peasy chicken squeezy!
Salt & Pepper oven roasted chicken and potatoes – @fehmz
A super easy one-tray dish.
2kgs chicken pieces (skin on) – I use thighs and legs – Omnomnom!!
Peel and cut 2-3 potatoes into chunks.
Salt, pepper, lemon pepper, 1/4 cup steers garlic sauce, squirt of lemon juice, 2 heaped tblsp green masala mix (no ginger but if you only have green GG it’s fine, add extra green chilli depending on your tolerance. I used the green masala mix by HomeStyle Foods, @sharonald’s mum it’s legit the best!), sprinkle of garlic and herb spice, 1/4 cup water.
Mix well, then throw the chicken in and coat well.
Smear ghee into your oven dish. Throw in potatoes and place chicken.
Pour the leftover marinade over the potatoes and everything else (save 1/4 cup if you want to make a sauce)
Add two sprigs of rosemary (optional, I didn’t, I only garnished with it). Cover in foil. Pop into preheated oven on 190 degrees. Forget about it for an hour or so. Turn once or twice.
When potatoes are almost done like 96% ?. Remove foil and turn the oven to grill. Let the chicken grill til the skin is lekker crispy.
Pull out the oven, garnish with coriander and serve.
Use leftover marinade to make a sauce with 250ml fresh cream if you need sauce with your chicken, add more salt, pepper and chilli as needed. (I don’t make a sauce and the family loves this dish as is)
Additions: you can add frozen peas, baby carrots or other veg to the mix as well.
