Nougat Kataifi
I made nougat kataifi with @sallywilliams_nougat for Eid and I can’t get enough of it ??

Let’s make nougat kataifi!
First things first, make a simple syrup with equal parts sugar and water (1 cup water, 1 cup sugar, boiled). You can infuse it with any flavour or leave it plain. Place in fridge and let it get cold for later use.
1 pack kataifi pastry
1 cup melted butter/ghee
12-14 @sallywilliams_nougat pieces (frozen for 2-4 hours or preferably overnight)
Preheat your oven on to 170deg C
Separate your kataifi a little. You can mix in half the melted butter to make it easier (I figured this afterwards ?)
Lay some kataifi strands down the width of your nougat piece and about 20cm length.
Place a piece of frozen nougat on the end and roll forwards with the kataifi wrapping it tightly.
Pack into an oven proof dish, continue rolling and packing until all nougat or kataifi is finished. Place each nougat kataifi right next to each other.
Pour the remainder of the butter over and bake in the oven until golden brown, approx 35-45minutes
Take out of the oven and immediately pour over your cold simple syrup. Listen to that crackle ?
Garnish with chopped pistachios/rose petals/drizzled chocolate/chopped nougat and serve once cooled.
