Nani’s piaaj beda is something that I used to absolutely love as a kid. I would ask for it every time we went to Nani’s house.

Add ghee to your pan then:
1 thinly sliced onion
Salt
1/4 tsp Turmeric
Chopped green chilli
Tiny pinch cumin – optional
Cook for a little bit then add:
4-5 eggs
Pepper
That’s it! Serve nice and hot with a cuppa chai.
