Mini choc swiss rolls
The best mini choc swissrolls ever. If you follow this recipe to the T, it will come out amazing ♥️ and make approx 18 mini swiss rolls.

1/2 cup castor sugar
5 eggs (4 if jumbo, 6 if small)
1/4 cup flour
1/4 cup cocoa
1/4 cup maizena
1 tsp baking powder
250ml fresh cream (cold)
2 tblsp icing sugar
Preheat your oven to 220deg C (or 200 if fan assisted). Grease a rectangular baking pan with Cook and Bake (pan size: approx 20cm x 30cm as recommended by Fati, I got mine from @stashys but a bigger size of 25cm x 40cm works even better) then line with baking/wax paper and grease again.
Beat the castor sugar and eggs for approx 15 minutes or until light and fluffy.
Sift together flour, baking powder, cocoa & maizena TWICE.
Sift the dry ingredients into your egg mixture in 3 batches, folding until just incorporated, do not overbeat.
Pour the mixture into the prepared pan and bake for approx 10mins or until light brown
Now prep 2 clean dishcloths.
Turn the cake out onto one dishcloth, slowly peel back and fold the wax paper in thirds lengthways (the long side). Use it to measure and cut the cake into 3 equal strips.
Lay the slices near the edge of the dishcloths and roll lengthways tightly with the cloth. Leave to cool.
Beat the fresh cream with the icing sugar until stiff peaks form.
Once your cakes are completely cooled, unroll, fill with fresh cream and roll again with the cloth. Place in fridge to set.
Topping:
Make a ganache or do the following:
1 tin caramel treat (or 1 cup)
1/2 tin nestle cream (125ml)
100g chocolate, melted
Combine.
Remove swissroll from fridge. Unwrap from dishcloth. Measure and cut 6cm for each swissroll. Place them on a rack with a tray under.
Pipe over a tablespoon of topping on each to coat.
Decorate as desired.
Can be made up to 2 days in advance.
