Mediterranean StreetFood Fries
If you thought loaded fries were just about cheese and chili then say hello to Mediterranean StreetFood Fries inspired by Pinch Of Yum!
This was legit easier than I thought it would be. I air-fried the @mccain_sa sweet potato fries in the @philipshomelivingsa new Essential XL Fryer.
Topped it with a chickpea salsa. Toasted pita chips and garnished. It was delicious!!
Here’s how you do it:
Grab one bag of frozen sweet potato fries from McCain and toss it into your air fryer. You can choose the Frozen fries option or just set it on 180degC for 12-15 minutes, checking halfway.
The chickpea mix:
1 can chickpeas, drained
1 tomato finely chopped, or half a punnet of baby Roma
A handful of chopped flat-leaf parsley
1 clove garlic, crushed
Salt
Pepper
Olive Oil
Juice of one lemon/lime
Mix
Tzatziki
1 cup yoghurt
1 clove garlic, crushed
Salt & Pepper
1 grated Mediterranean cucumber, drained
Take two pitas, cut into strips, brush with oil, and pop in the air fryer for 5 minutes on 180degC, turn over halfway.
Now to assemble you need:
Cooked sweet potato fries
Chickpea Salsa
Feta
Chopped Parsley
Fried Pitas
Peanuts and Raisins – optional
Tzatziki
Jalapeno peppers – optional
On a platter add your fries, salsa, dollop with tzatziki, top with crumbled feta, sprinkle with parsley and the peanuts & raisin. Serve immediately.
