Masala Roast Chicken 2-ways (featured on Heerlik Halaal)

The thing with easy recipes is I love that I have versatile options, this masala roast chicken can be made on the stove or in the oven. I made this on the #heerlikhalaal show and you can watch the episode on DSTV catch up if you’ve missed it ?
If you’re like me and are juggling many balls in the air, this kind of recipe is super quick and easy!! I love it.

Masala Roast chicken – 2 ways
In a mixing bowl add:
3 tbsp ginger garlic masala
3 tbsp garlic chilli masala (I use the all in one masala from @sharonald’s mom, it’s the bomb diggidy!!)
Add a handful of fried onions
Salt and pepper to taste
3 tbsp Tomato sauce
2 tbsp Mustard sauce
2 tbsp Chilli sauce (Maggi)
2 tsp Fine chilli powder
1/2 tsp Turmeric powder
Juice from 2 lemons
Reserve 2 tbsp of the marinade for the stove
Add the chicken to your marinade and let it sit.
How to cook it?
Stove way:
Add oil, 3 slit green chillies, 1/2 tsp whole jeera seeds and a couple of curry leaves, cook for a bit then add the reserved marinade and cook a little longer. Now add your marinated chicken and cook until done.
Garnish with chopped coriander and serve.
The oven way:
In an oven, tray add some oil or ghee, a sprinkle of jeera seeds.
Add the marinated chicken, top with slit green chilli, cover with foil and pop into the oven on 180deg c for 30minutes.
Once done, take off the foil and turn to the grill function. If the skin is on, grill so that it is crispy and keep basting with the juices from the pan.
Garnish with chopped coriander and serve.
Serve with your sides of garlic baked potato, pumpkin, onion rings etc.
