Make your own Ghee
I’m surprised and happy to see that so many of you are just like me, we have always bought our ghee ?. I have a friend who always makes her own and it looks so great in her little glass jars that when I had some extra butter expiring in the freezer, I figured it was time.

You can make as much or as little as you want, I made a huge batch so that it lasts me a few months. 20 bricks made just less than 9 litres of ghee. It can take 1-3 hours to make depending on the quantity you make.
The key is in letting it simmer until it’s nice and golden. Don’t skim the foam too early, wait for it to reduce and become browner and golden before skimming. Butter separates into three layers, the foam, the liquid gold “ghee” and the bottom browned salty bits.
The smell wafting through the house is this delicious nuttiness and I love it! Hope you try it, and if you do, you might never buy ghee again! It’s so good, nothing like the quality of homemade ?
