J’s Special (loaded baked potatoes)
I’m addicted to the J’s special from those Copa Cabana days…then I met @jamiloonnisha this weekend who it’s named after and again….my craving has reared its head 🤣 so I had to make it again. I don’t have an exact recipe, I just wing it.
But since you’ve nagged 😆, here’s my process.
Prepare and bake 2 potatoes, pierce them, parboil for a bit if you want, rub in some oil and pop into a very hot oven (200 deg C) so that the skin gets lekker crispy.
Pull out, arrange into a bowl/dish and slice open and squish down a bit and sprinkle salt and gooi on some nice blobs of garlic butter to start getting melted in there.
Top with creamstyle corn. Just like that!
Then top with a creamy mushroom sauce (I honestly cannot remember if it’s corn first or mushroom sauce first 🤣, but who cares), I’ll throw in my recipe in the comments.
Top with cheese. Pop that baby back into the oven and let the cheese sizzzzzzzle!
Serve it, topped with sour cream for extra zing but I didn’t even get to that part, I needed to dig in immediately. Lol
