I am always looking for an easy way to make something delicious! It’s my vice. If it’s easy I will try it. If it’s too complicated I normally have to prep myself and if it’s very complicated I’ll try it once so I know how but then more often than just choose to buy it ???
This icebox cake is so easy you can do it in your sleep!
I added litchi on a whim because I had it on hand and I feel like it was the PERFECT flavour compliment.
Icebox Gateaux adapted from Just Four
2 litre vanilla ice cream
2 punnets raspberries
1 punnet litchis (10-12) chopped
1/3 cup icing sugar
5-6 store bought meringues
Mix the raspberries, litchis and icing sugar together. Macerate the raspberries a little and set aside.
Add the ice cream to a bowl and pull apart with a fork. Break the meringues into the ice cream and fold in the raspberries & litchis (discard the liquid)
Line a freezer proof container with clingfilm and leave enough over the sides to close over. Fill your mixture into the container and freeze for 6-8 hours or overnight.
Unmould, decorate and serve in slices.
