Gourmet Potato Salad

7 medium potatoes
Peel,cube&boil with salt to taste. (I used my instant pot. Pressure cook for 10 minutes – Amazing mash!!)
Mash with 2tbsp of butter
Salt to taste
1 tsp crushed black pepper
2-3 tsp crushed Green Chillies
Roll into balls and let them set in the fridge (or just use an ice cream scoop for the balls)
In a small bowl, whisk the following
1 large tin nestle cream
4 tbsp brown sugar
Half a cup of mayo
3 tbsp lemon juice
Salt to taste
When balls are set, dip into mixture covering it generously. Place onto a pretty platter, and pour over the rest of the mixture.
Sprinkle finely chopped tri-colour peppers and parsley/chopped chives
