Garlic chilli noodles
I finally tried out that TikTok trending garlic chilli noodles and let me just say, it is totally everything it’s hyped up to be!
And since I’m trying to have a better balance in what I feed the kids, I amped it up by mostly using products from the new Live Well range from @picknpay! It’s all carefully selected and good for you!

1 pack Live Well carrot noodles
1 pack Live Well cauliflower noodles
1 tin Live Well chickpeas
4 Live Well jumbo Eggs – soft boiled for 2-3 minutes
Pan fry 2 chicken breasts in some oil, salt, lemon pepper and garlic.
Set aside. (you can also get the Live Well range if you like, it’s NIHT-approved)
To a heatproof bowl add 3 tbsp Soy sauce 2 tbsp Black vinegar (sub brown vinegar) 1-2 garlic cloves, chopped fine.
A good sprinkling of rough red chilli or Korean chilli powder
Handful chopped spring onion Handful cashews Heat 1/2 cup of oil until very hot.
Pour into your bowl and catch that sizzle.
Add your noodles into the sauce immediately to warm up.
Scoop into 3-4 bowls. Save the leftover sauce.
Now assemble your bowl, add the chicken and pour over the remaining sauce.
Add chickpeas, more spring onion, pickled ginger, and the eggs cut in half. Throw on some sesame seeds and serve. It’s amazing!!
You can sub with egg noodles if you don’t want to try veg noodles. Leave out the chicken and egg for a vegan version.
