Gajar Halwa – Noorjehan Masie
If my house tastes like a wedding, I might as well go all out and put some gold on this baby. Mabrook!

I adapted this recipe to suit what I had in my grocery cupboard.
Gajar Halwa – Noorjehan Masie
2 packets carrots or just make it 1.5 kg – grated finely
3 litres milk
Boil the above for half a day. Stirring every now and again. The milk must literally evaporate almost completely.
Then in a bowl milk together:
1 tin condensed milk (keep a second one close by. You might want to add more depending on how sweet you like it, I added more)
1 tin ideal milk
1 large tin Nestle cream
2 tblsp klim (I didn’t have this so omitted it)
Add to your carrots and mix in.
Add:
3/4 – 1tsp elachi
Piece of taj/cinnamon stick
Keep cooking until the liquid is absorbed at least halfway, preheat your oven to 180 degrees celcius.
In a pan braise the following until golden brown:
2 cups ghee (I reduced to 1 cup)
2 tblsp semolina
Add this to your pot and mix well.
Put your pot into the oven and turn every half hour until done. When you see the ghee rise to top. Switch oven off and leave in oven for an hour.
It’s ready and DEELICIOUS now!! Take out and serve warm. Or let it cool completely, pack it into containers and freeze for when you need it ? it freezes excellently!
