Fried Calamari
I have nightmares about his rubberband-ish all my calamari attempts have been but I’ve finally figured it out!
The tenderiser is the key, you sprinkle over 1 tbsp of bicarbonate of soda. (Got this tip from the guys at @7seasfisheries when I bought the calamari )
Or you can soak in buttermilk with salt.
Set aside for 30 minutes.
Make your flour mix:
1 cup self-raising flour
1 tsp salt
2 tsp chilli powder
1 tsp white pepper
1 tsp garlic flakes
Rinse your calamari after its bicarb soak.
Toss into the flour until well coated. Fry in medium-hot oil until Golden brown (approx 30seconds to 1minute max),
This comes out like OB fried calamari!!
Serve immediately with lemon wedges and spicy rice.
