Get a whole fillet from your butcher, trimmed and ready (Forsmay 🤪 hint hint)

Make a rub. Now, remember, I married a non-Indian so I don’t cook with much Indian spicing coz his belly can’t deal (weakling 🙄) so if you need to add your masalas go ahead!!

Make a rub with:
3 tsp brown sugar
Ground green chilli
2 tsp salt
1 tsp crushed black pepper
3 garlic cloves
2 tsp steak and chops spice (any brand, I use the @woolworths grinder)
Pinch of rosemary
Grind with a pestle and mortar then add:
1/4 cup vinegar
2 tbsp honey

Now get your self comfortable, and begin the massage, of the steak obviously. Leave to marinate for 3-4 hours.

Heat a cast-iron skillet HIGHHHHHH! Add some oil and a head of garlic, rub it around to season the pan.
Lay your fillet down nicely, and hear that sizzle 😍
Sear it on all sides for 4-5 minutes on each side if it’s a huge fillet, if it’s small then 3-4 minutes each side.

Add sliced onions when it’s almost done.

Cover with foil and pop into a preheated oven at 180 degrees for 10minutes (medium rare) or just turn the heat down and leave it covered on the stove for 10-12 minutes.

Serve with buttery peas and spices chips. Go big or go home!!

Now you have pulled steak! Which you can use on open sandwiches for supper tomorrow, I literally pull the steak strands because I love it like that. Add a mustard mayonnaise, some rocket, avo, the caramelised onions, basil pesto, add anything you like!
Or add tomato sauce, mustard and mayo then turn it into a toasted steak sandwich
