Peppermint Crisp Ice Cream Celebration Cake
There’s nothing like a good old peppermint crisp caramel pudding. With the days getting hotter I wanted to work on my own version as an ice cream celebration cake! This is serious #homemadehappiness ??I swear this is the BEST ice cream cake I have ever made. I was licking my fingers the entire time, the ice cream is so good. And the kids kept eating most of my garnish and the ice cream and the brownies. I had to start hiding it away so I could finish the dish.

Fehmz PepperMint Crisp Ice Cream Celebration Cake:
2 litre tub of vanilla ice cream
1 box of chocolate brownie premix
1/3 cup buttermilk
2 large slabs of peppermint crisp chocolate – chopped into small chunks
1 jar of buttercream icing (optional)
chocolate ganache made with 500ml cream, 2.5 cups chocolate
1 tin caramel treat
Make the chocolate brownie mix as per box instructions and add an additional third of a cup of buttermilk.
Bake in a flat tray for 30minutes
Remove and cool. Slice into rectangles.
Let your vanilla ice cream soften.
Add in 1 tin caramel treat and half of the crushed peppermint crisp chocolate. Combine well.
Add some to a tin lined with cling wrap (don’t forget like me ?)
Then press in your brownie rectangles on the edges.
Add ice cream between the pieces to hold in place and add more of the crushed chocolate in between.
Top up with the rest of the ice cream.
Freeze until hard. Remove from tin. Garnish with chocolate ganache, peppermint crisp chunks and pipe some buttercream rosettes.
Pop it back into the freezer until ready to serve!
