Date cookies
My Masie’s neighbour used to make these date cookies every time we went to PMB and I would eat 7 too many every.single.time ? anyway I tried to get the recipe, let’s just say it was one of “those” recipes that she literally makes from memory so the instructions were a challenge ?
But try it with this cookie dough recipe, it’s amazing! In fact, this cookie dough recipe is perfect for any kind of cookie ? it’s the perfect base dough and it’s from @sprinklebakes book which I LOVE! Watch me make it here
Sugar cookies – @sprinklebakes
250g butter
1 cup plus 2tblsp castor sugar
1 egg, lightly beaten
1 tsp vanilla extract
3 cups flour (plus more for rolling)
Pinch of salt
Mix butter and sugar just until combined. Do not overmix!
Add the egg and vanilla essence and combine again.
Add the flour and salt until a soft dough forms.
Roll with some extra flour. Cut into shapes.
Refrigerate for a few minutes before baking in a preheated oven at 180deg until golden brown. Or roll and fill into date rolls like I did here.
