Chicken Chowmein
I tried this Chow Mein recipe from Nagi of @recipe_tin and let me tell you it’s the best recipe ever!! I also love that she always give substitutions for any alcohol ingredients so her recipes are so easy to make and taste delicious too.
Chicken Chowmein adapted from @recipe_tin
Ingredients
500g chicken breast or thigh fillets , thinly sliced
4 cups green cabbage , finely shredded (or use the stir fry mix from Woolies that has cabbage and carrots already)
1 1/2 tbsp peanut oil (or other cooking oil)
2 cloves garlic , finely chopped
1 pack Chinese noodles or spaghetti, boiled
2 carrots , julienned (omit if using story fry mix)
1 1/2 cups bean sprouts (optional)
3 spring onions , cut into 5cm pieces
CHOW MEIN SAUCE:
4 tsp cornflour / cornstarch
4 tbsp soy sauce
3 tbsp oyster sauce
3 tsp sugar
1 tsp sesame oil
Pinch White pepper
KEEP ASIDE:
4 tblsp chicken stock dissolved into 1/2 cup water. (Or 1 stock cube or 1 sachet stock sauce in 1/2 cup water)
Method:
Marinade : Chow Mein Sauce
Mix together cornflour and soy sauce, then mix in remaining ingredients.
Slice your chicken finely and add 2 tblsp of the above sauce. Leave to marinate for minimum 10 minutes.
Prepare your noodles according to package instructions
Heat oil in wok or large fry pan over high heat.
Add garlic and stir fry for 10 seconds or until it starts to turn golden – don’t let it burn!
Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw – about 1 minute.
Add the stir the cabbage and carrots (or the stir fry mix) and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
Add the noodles, Sauce and stock water. Stir fry for 1 minute, tossing constantly.
Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
Add a little more water if it seems a bit dry. Don’t cook it til dry!
Remove from heat, garnish and serve immediately.
