Butternut Dessert Casserole
Vegetables for dessert? No way!!
A few years ago my cousin Fatima Hassim Akoo made this sweet potato pudding and we were hooked! My mum and I mentioned it many times since then but didn’t make it as many times as we spoke about it ?
But that’s about to change! You need to try this, trust me!
So you can either find the orange sweet potato, cook it and mash it. Or use butternut. Or just buy frozen mashed butternut like me ?

Butternut Dessert Casserole
Ingredients
3-4 cups cooked and mashed butternut or orange sweet potato (or two packs of @mccain_sa mashed butternut – defrosted)
½ cup butter, melted
⅓ cup milk
1 cup brown sugar
½ teaspoon vanilla extract
2 eggs
Pinch of cinnamon
For the topping:
1 cup light brown sugar
½ cup all-purpose flour
125g butter
1 cup chopped pecans
Method:
Preheat oven to 175 degC.
In a large bowl, mix together the 1/2 cup butter, milk, sugar, vanilla extract, cinnamon and eggs. Add in the butternut. Spread mixture into the prepared baking dish.
In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then mix in pecans. Sprinkle pecan mixture over butternut.
Bake for 30 minutes in the preheated oven, or until golden brown.
Serve warm or cold with fresh and a scoop of vanilla ice cream.
