Butternut and creamed Spinach
Butternut & Creamed Spinach Casserole
You can oven bake or air-fry your butternut and chickpeas.
Prepare your butternut by tossing in olive oil and S&P. Do the same with your chickpeas plus a good dash of cayenne pepper. Bake butternut until done and chickpeas until crispy – on the same pan so it’s easy.
Keep the chickpeas aside to garnish.
Prepare your creamed spinach as per the packet instructions. Keep aside.
Do the same with your cheese sauce.
Now just toss it all together with the cooked butternut, top with the grated cheese and pop it back into the oven or air fryer for the cheese to melt and get crispy.
Add the chickpeas on the top, garnish as desired and serve as a main for Meat-free Monday or as a side to any grilled steak, ostrich or chicken dish.
