It’s curry and rice weather so today’s Basics101 is just perfect!
This one is for the beginner, the one who finds the kitchen intimidating, the one newly learning to love the kitchen and prepare food ♥️ If you already know-it-all then this one isn’t for you ?
Simple Mutton Curry for beginners (inspired by a recipe from the green Food with Flair)
2 onions – finely grated or blended in a machine with 60ml water
Sauté on medium heat in:
3 tbsp ghee
1 tsp dhana jeero
Pinch of whole jeero
1 piece cinnamon stick
1 tsp nihari spice – optional (I use the @krea_sa brand)
Half tsp turmeric
1 tbsp ginger garlic (with or without masala) – try @thehousewivespantry
1.5kg mutton
1.5 tsp salt
2tblsp vinegar – optional – acts as a tenderiser
4 grated tomatoes (no skin) – can be blended
Add 1 tbsp tomato paste
Pinch of sugar
1-2 tsp red chilli powder
1 tsp ground green chilli – optional – try @sujees_gourmet_food
Add some water and pressure cook for 12 minutes in your @instantpotsa and let it NPR
4-5 peeled and quartered potatoes
Add a bit more water and pressure cook again for 5-7 minutes but force release pressure otherwise the potatoes will fall apart.
3-quarter to one cup of water
1 tsp salt – to taste
Garnish with coriander and serve.
Tip 1. For bunny chow, take a little of the curry, and make a slurry with 2tsp cornflour. Add back to curry and cook until thick.
