Fluffy rice, the Fehmz way – Watch here
Tip 1:
Always wash your rice. In fact, if you can soak it for about 30mins before you start the first rinse, that’s even better. It reduces the starchiness, cleans it and makes for fluffy kernels. Rinse 2-3 times.
Tip 2:
Bring your water to a boiling point before adding your rice. Add salt, cardamom and a piece of taj/cinnamon stick. I use the 2 cups water to 1 cup rice ratio. And 1 tsp salt for each cup of rice. Do not close the lid. Boil on high.
Tip 3:
If you need more water, always add boiling water, never cold water to cooking rice
Tip 4:
When you drain your rice, save the water for your plants. And give your drained rice a quick cold rinse to stop the cooking process.
Tip 5:
Steam your rice in your oven, it’s super easy and convenient, cover with crumpled wet wax paper, and seal with foil and pot lid.
Tip 6:
You can cheat a vagaar by just adding ghee, fried onions and green chilli when steaming
Tip 7:
You can make additions to your rice like methi or peas or anything else during the boiling process.
Tip 8:
How do you know your rice is ready to be steamed? Taste one, or rub a kernel between your fingers, if it breaks and is completely soft it’s cooked too far, drain immediately, rinse in cold water and steam for a very short time. If you can still feel a little body, look at it and see if you see a white dot in the very middle, then it’s ready for steaming.
Most Important Tip:
Practice makes perfect, I still get it wrong some days when I am not paying attention. It will still get eaten and feed hungry bellies. Don’t let it stress you out.
