I learnt the best tip ever for good buttercream at a course led by a pastry chef a few years ago and it’s been my go-to ever since.
You want good buttercream? Always use BUTTER, and always beat it first. Just the butter. You may be tempted to throw everything into the bowl at once, don’t do it.
Soften your butter and cream it until it turns white, then add the rest. Using a balloon whisk or any whisk attachment is the best.
Use a ratio of 1:2 of butter to icing sugar.

500g softened butter
1kg icing sugar, sifted
1-2 tsp flavouring (vanilla essence)
2tblsp milk, optional
