Amazing Self Saucing Pudding
I tried @saadia_b_‘s self saucing pudding and oh my word it’s absolutely delicious!! I would only make one addition, a totally unnecessary addition ? some baking choc chips in the dough ?
Cannot wait to make it again! And this took only about 15-20 minutes to make and pop into the oven. Try it! You won’t be sorry.

Preheat your oven to 180 degrees C
Batter:
50g butter, softened
3/4 cup castor sugar
1 egg
1 cup flour (250ml)
30ml cocoa powder (2tblsp)
15ml baking powder (1tblsp)
Pinch of salt
200ml milk
Optional: add a handful of Callebaut choc pieces or callets to the batter.
Cream butter and sugar, add the egg. Sift dry ingredients together and add in alternating with the milk.
Mix and add to a fairly deep oven proof dish approx a 20cm X 25cm dish (it’s going to rise so you want something deeper and you still need to add the sauce) do NOT put into the oven yet, you need to add the sauce.
Sauce:
In a saucepan add:
1 cup water (250ml)
1 cup brown sugar (250ml)
30ml rich cocoa
Bring to a simmer until sugar dissolves, switch off. Add 5ml vanilla essence.
Pour the hot sauce straight over the batter and bake in a preheated oven for 25-30 mins (I pulled mine out at 25mins, this was the sweet spot)
Serve immediately with ice cream/fresh cream/raspberries/anything you desire
